Does a knife block actually keep your knives sharp? Can I get rid of it as it takes up too much room?
Bottom line, NO. A knife block doesn't actually keep your knives sharp by itself. What a knife block *DOES* do is to keep the cutting edges from knocking around against one another and other items in the drawer and becoming dulled, knicked, etc.
I understand that your block takes up a lot of room, but there are several alternatives:
1) A magnetic knife holder mounted to the wall; or 2) a knive "block" that's more like a tray that fits in a drawer. Personally, I'd go with the tray holder that fits in a drawer, especially if you have kids or pets around.
Oh, by the way, if you do use a block or tray, have the blades facing UP, not sliding against the wood. Even wood will take the edge off a sharp knife.
